What’s for Dinner Tonight: Lentil Soup
Tonight Patrick made Giada de Laurentiis’s lentil soup —
that’s right I have a husband that can cook. (And he can make fudge, too.)
Giada’s soup was delicious.
I had to have 3 bowls (okay, so the second 2 bowls were only half filled, but still).
We came across this recipe when looking for inexpensive protein alternatives.
Lentils are a great option. I love Giada, so we had to try this.
This yummy soup has carrots, celery, onions, garlic, diced tomatoes, chicken stock, pasta, thyme, and of course lentils.
A vegan version of this soup could easily be made by substituting the chicken stock for vegetable stock. I sure it would equally as tasty.
My favorite part of the soup is the broth. Next time, we will add more chicken stock or water (1-2 cups) to have more of the scrumptious broth.
The picture of the lentil soup was taken after we had eaten some, so the recipe really makes more!
