How to Train Your Dragon Birthday Party Drink: Light Fury Punch

How to Train Your Dragon Birthday Party Drink: Light Fury Punch
My daughter requested a Light Fury themed drink for her How to Train Your Dragon Birthday party. That meant the party punch needed to be white.
The first flavor that came to my mind was coconut. We make a homemade coconut syrup to pour over crushed ice (hello yummy snow cone). Recipe for coconut syrup is below.
Pineapple and coconut pair well together so I added some pineapple juice to our drink. Too much pineapple juice overpowers the coconut and makes the drink more murky yellow than white. It still tastes delicious though.
This is why the recipe only call for 1/2 cup of pineapple juice. You could probably get away with using 1 cup if you want more pineapple flavor. Any more than that will mess with the color and taste.
I buy the Dole pineapple juice in a can. Pour the remaining juice into ice cube trays to freeze and save for later.
Seltzer water makes the drink fizzy. You can adjust the amount of seltzer water depending on just how much fizz you want. We found that too much seltzer water makes the punch seem a bit too watery. It’s not as creamy. If you want more fizz, I recommend adding 1/2 cup more syrup to combat the watery nature.
The ingredient that makes my Light Fury Punch white is coconut milk. I use So Delicious Unsweetened Coconut Milk. It’s in the refrigerator section next to the almond milk and soy milk. Coconut milk doesn’t really have much of a flavor. It reminds me of cow’s milk, but it’s a little richer and thicker.
Coconut Syrup Recipe
Ingredients:
- 2 cups water
- 2 cups sugar
- 1 cup unsweetened shredded coconut
Directions:
In a large saucepan, bring sugar and water to a boil stirring occasionally. When the mixture turns clear, reduce heat slightly and add the shredded coconut. Cook the shredded coconut in the syrup for about 3 minutes stirring occasionally.
Do not let the mixture boil over. If it starts to bubble up, lower the heat a little. You still want to maintain a low boil so you may need to raise and lower the heat accordingly.
Remove from heat. Allow the coconut syrup to sit for 10 minutes. Then, remove the shredded coconut from the syrup. Pour the syrup through a fine mesh strainer. Be careful as the syrup will still be hot.
Use the syrup to make the Light Fury Punch while it’s still warm or allow the syrup to cool completely and store in the refrigerator until you’re ready to use. The coconut oil (and flavor) will float to the top and harden. Warm up the syrup slightly before using it.
Light Fury Punch Recipe
Ingredients:
- 3 cups coconut syrup (see recipe above)
- 1/2 cup pineapple juice
- 6 cups unsweetened coconut milk
- 2 cup seltzer water
Directions:
Combine coconut syrup, pineapple juice, unsweetened coconut milk, and seltzer water. Stir.
Serve over ice. Enjoy at your How to Train Your Dragon birthday party or whenever you feel the need for a yummy drink.
