Monster Cupcakes in the Microwave

Aiden enjoyed making cupcakes in the microwave and creating his own recipe so much that he’s asked to do it again several times. His latest idea was to make monster cupcakes in the microwave. It’s a super easy and fast way to have a little special treat.

We essentially used the same recipe as we did in our original kitchen chemistry cup cake post. There is some leeway, so feel free to play around and let your kids measure the ingredients. Aiden was in charge of the ingredients. Here’s {about} what we used:

  • 1/4 cup flour
  • 3 tablespoons cocoa powder
  • 3-4 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 3-4 tablespoons milk
  • 2 tablespoons of canola oil
  • 1 egg
  • splash of vanilla

Mix the dry ingredients together in a bowl. Then, add the wet ingredients.

Pour the batter into an oiled microwave safe container. We used coffee mugs the first time we made them. This time we used glass ramekins. The ramekins seemed to allow for more even cooking. This could have been due to the shape. Our mugs were quite tall. The outside of the cupcakes cooked more quickly than the inside.

Do not fill the containers to the top. As the batter cooks, the cake will rise.

Microwave for 1 minute. If it seems too wet still, microwave for another 20 seconds at a time. Be careful not to over cook your cake or it will turn to a rock. Use a toothpick to check for doneness.

Decorate your cupcakes.

We sprinkled on powder sugar and then turned them into monsters.

Aiden chose to use mini peppermint patties and candy corn. How fun!
